Delicious Cookie Pie Recipe

I had already taught you all the techniques, secrets, and the origin of the stuffed cookie. Now, we’ll refine it and bring you something even more special: a stuffed cookie pie recipe.

For those who have been following me and have been clients for a long time, you already know this delight.

Famous by the name “Bebel Pie,” it got this name because of a very special client named Isabella Bispo—nicknamed Bebel—who tasted a pie with a cookie crust filled with brigadeiro and Nutella during one of her trips.

She was simply amazed, and as always, she sent me the reference and gave me an ultimatum: “You have to make this.”

It might sound strange, but it’s not. I have some clients who are simply sources of inspiration, and she is definitely one of them.

So, not to make it exactly like the reference, I, as a pastry chef, added my own touch and changed the recipe. I opted to use a white brigadeiro filling and top it with Nutella, and the result, my friends, was tear-worthy!

It became an instant hit, and whenever I make it, it sells out.

Now, I hope to be the inspiration for you that Bebel once was for me. You can make it exactly like this or fill and customize it with your own personal touch.

Shall we?

  • Difficulty level: It seems difficult, but it’s not.
  • Yield: one pie of approximately 2 kg
  • Preparation time: about 1 hour
  • 200 g of margarine or butter at a paste-like consistency (room temperature)
  • 125 g of granulated sugar
  • 125 g of brown sugar
  • 2 eggs
  • 400 g of all-purpose flour
  • 1 tablespoon of vanilla
  • 200 g of chocolate chips
  • 1 teaspoon of baking powder
  • First, in a mixer, place the margarine/butter and beat until you get a light, homogeneous cream.

  • Keep the mixer on low speed and add the ingredients in the order below.
  • Add both sugars.
  • Next, the two eggs.
  • Add the all-purpose flour.
  • Add the vanilla extract.
  • Lastly, add the chocolate chips.
  • Take this dough and put it in the fridge.

Ingredients for White Brigadeiro

  • 1 can (or box) of full-fat condensed milk
  • 1 can (or box) of cream (heavy cream or table cream)

How to Prepare White Brigadeiro

  • Place both ingredients in a pan and stir well over medium heat until it separates from the bottom of the pan.
  • Grease a plate with butter or margarine, pour the white brigadeiro onto it, cover with plastic wrap, and refrigerate.

Assembling the Pie

  • Take 2/3 of the cookie dough, place it between two sheets of plastic, and use a rolling pin to roll it out. Then place the dough in a springform pan (with a removable bottom).

  • Then fill it with the white brigadeiro.

  • Take the remaining dough, roll it out in the same manner, and cover the filling.
  • Bake in a preheated oven at 180°C (350°F).
  • Bake for about 25 minutes.
  • Remove from the oven and let it cool.

Video – Cookie Pie Recipe

  • To make your life easier, chill the cookie dough well before rolling it out. This will make it easier to shape in the pan.
  • If you don’t have a rolling pin, you can take small portions of dough and press them into the pan by hand until the bottom and sides are covered.
  • The filling can’t be too hard. If it is, add a little cream and stir well until it becomes homogeneous.
  • Wait for the pie to cool before cutting; if you cut it hot, the filling will run out.
