Stuffed Cookie Recipe

- Yield: 10 stuffed cookies
Ingredients:
- 200g margarine or butter at paste consistency (room temperature)
- 125g granulated sugar
- 125g brown sugar
- 2 eggs
- 400g wheat flour
- 1 tablespoon of vanilla
- 200g chocolate chips
- 1 teaspoon baking powder
- 100g Nutella
Method of Preparation:
- In a mixer, place the margarine/butter and beat until it becomes a light, homogeneous cream.
- Keep the mixer running on low speed and gradually add the ingredients in the order below.
- Add the sugars.
- Then the two eggs.
- The wheat flour.
- Add the vanilla essence.
- And finally, the chocolate chips.
- Take the dough and chill it.
- After the dough has hardened, make a small ball with your hand and use your finger to make a hole in the middle of the dough.
- Fill with Nutella and cover with a bit more dough (see video)
- Place on a baking sheet lined with parchment paper or a silicone mat.
- Then bake at the lowest temperature, or if you have an electric oven, bake at 160°C (320°F.) for about 13 minutes.
- Allow to cool and then enjoy.

They were invented in the 17th century, in the Netherlands, and their name actually comes from the word “koekje,” which in Dutch means small cake.

Before putting a full cake recipe in the oven, a small amount was placed in the oven to test the dough and the oven temperature.
The British, who are no fools, realized that this small dough was perfect with their famous tea since it resembled a small biscuit.

This recipe also works really well with dulce de leche, traditional and flavored brigadeiros. However, I don’t recommend using jams or very watery fillings, as they might make the cookies too moist, and the final result might not be ideal.
Golden Tips – Stuffed Cookie
- Don’t place the cookies too close to each other in the oven; they triple in size and, if one touches the other, you’ll end up with a sad-looking cookie pie instead of individual cookies.
- If possible, let the dough rest overnight. When it rests well, it’s easier to shape.
- If you want to use real chocolate chips, the result is even more delicious.
- Be careful not to overbeat the dough after adding the chocolate chips, as they can break.
- If your cookie ends up without visible chips, after shaping and filling, place some chips on top and press them in lightly.
